This versatile cake can be topped with any number of yummy things to create a quick and decadent dessert! Have some raspberry or strawberry preserves in the fridge? Slap it on! Got a jar of peanut butter or nutella in your cupboard? Who has time to make frosting, smear some on! A handful of fresh summer berries and whipped cream or vanilla ice cream? Don't mind if I do! Have a bare pantry? A simple dusting of powdered sugar will still dress this up and make you proud to serve it at your table.

1 stick butter @ room temp 1 cup lightly packed brown sugar 1/2 cup granulated sugar 1 egg 1/2 teaspoon vanilla 1/4 teaspoon salt 1 teaspoon *instant coffee powder (*for the instant coffee I used one packet of Nescafe Clasico instant coffee) |
1/4 cup sour cream @ room temp 1 cup cocoa 1 teaspoon baking powder 1/2 teaspoon baking soda 1 1/2 cups all purpose flour 1 cup butter milk @ room temp |
Equipment One large mixing bowl, one 9 inch loaf pan, and a hand mixer Directions Heat oven to 350 degrees and place oven rack in the middle. Grease loaf pan and set aside. In your mixing bowl on medium speed cream the butter and the 2 sugars. Next add your egg, vanilla, salt, and coffee until well blended. Add sour cream. On low add your cocoa, baking powder, and baking soda until combined. Add flour and buttermilk in 2 parts alternating. Take a spatula and scrape down the sides of your bowl ensuring everything has been incorpoated and pour into the loaf pan. *note this batter will be a bit on the thick side. Bake at 350 degrees for 50-60 minutes or until a toothpick comes out clean after being inserted into the center. Place on cooling rack. |
